Just wondering if anybody has any experience cutting one of these?
Hard, easy?
Am I giving enough information to answer?
It's a cute little gun. Looks like a rifle for an infant. (not a reccomendations)

It may be a "decent enough canvas" but very few Rossis get engraved because, once engraved, they won't sell for the price of the gun and engraving combined. This is true of many guns and has been discussed here before. American engravers make their living on well known American made guns such as Colt, S&W, Winchester, Parker, and so forth.

So likely I won't find anybody who has bothered on here then?
It's a bit different market I deal with, this is just a carving job. But wouldn't tackle it if there were known issues.

I'm not sure where it comes from. I know my own gun. And that's about the extent of my knowledge.

I've done one. It was pretty easy to engrave. It was for a cowboy action guy to shoot for fun. He didn't care about the resale.
