I practice on hot rolled steel at least 1/8" thick. I belt sand the scale and saw pieces 2"x3".

Im just a beginner, someone else might have a better suggestion

GRS sells practice plates that in steel are fairly cheep, I'm not a machinst so this works best for me..

Go to Hobby Town or a similar place for brass sheet or strips if you want to cut brass; It's cheap, easy to cut and it comes up to 2 inches wide. You can double sticky tape a piece to a block of wood to keep it solid while you work.

Go to home depot, lowes, or tractor supply and get the cold rolled steel in many lengths, widths, and thicknesses, and simply whack a chunk off with a hack saw. Sand it to the desired finish and go to cuttin'.

practice on your tools. Its great smorgasbord of hard and soft and various shapes and sizes, just like the real world.

FWIW I will be coming by Charleston tomorrow on my way to Englewood.
